Ingredients

For the Salad:

  • 100g of salad leaves (3-4 handfuls)
  • 50g walnuts (semi crushed and toasted )
  • 100g red seedless grapes
  • 100g Gorgonzola cheese (or a vegetarian blue cheese alternative)

For the Vinaigrette:

  • 3 Tablespoons high-quality olive oil (extra virgin recommended)
  • 1 Tablespoon white vinegar
  • ½ teaspoon smooth Dijon mustard
  • Salt and black pepper

Directions

Step 1: Prep the Salad Components

  1. Wash and thoroughly dry the mixed salad leaves. Set aside.
  2. Toast the walnuts(f not ready tosted ): Heat a small, dry frying pan over medium heat. Add the walnut and toast for about 3-5 minutes, stirring frequently, until they are fragrant and lightly golden brown. Remove from the pan immediately to cool.
  3. Halve and, if it’s with seeds , deseed the red grapes.
  4. Crumble the Gorgonzola cheese into small pieces.

Step 2: Whisk the Vinaigrette

  1. In a small bowl, combine the olive oil, white vinegar, and Dijon mustard.
  2. Whisk vigorously until the dressing is emulsified (slightly thickened and well-combined).
  3. Season the vinaigrette sparingly with salt and pepper.

Step 3: Assemble and Toss

  1. In a large bowl, combine the salad leaves, cooled toasted walnuts, grapes, and crumbled Gorgonzola.
  2. Drizzle the vinaigrette over the salad.
