- 1 medium sweet potato (بطاطا حلوة)
- 1 small tomato, sliced
- 1/2 cucumber, sliced
- 1/2 cup cottage cheese (for a truly local and frugal option in Egypt, use ‘Gebna Areesh’ – جبنة قريش)
- 1 tablespoon milk or water
- 1 teaspoon honey or maple syrup
- Pinch of salt
- 1 tablespoon mixed nuts or seeds, for topping (optional)
Directions
Step 1
Wash the sweet potato thoroughly. Place it in a small pot, cover with water, and boil on the stove for 10-15 minutes, or until fork-tender. Once cooked, set it aside to cool slightly.
Step 2
While the potato is cooking, crack the two eggs into a small, microwave-safe bowl. Add a pinch of salt and whisk with a fork until blended.
Step 3
Microwave the eggs on high for 90 seconds to 2 minutes, or until fully cooked. While the eggs are in the microwave, slice your cucumber and tomato.

Arrange the cooked eggs, cottage cheese (Gebna Areesh), and fresh vegetable slices on your serving plate.
